Winemaker's Notes

Like good jazz, our Papio Cabernet Sauvignon is smooth and expressive. The vibrant, fruity aromas and velvety flavors brim with ripe blackberry, black cherry and plum character. Provocative notes of vanilla linger on the fruity finish, inviting you to take another sip. Our Cab’s flavors are bold enough to take on barbecued steak with grilled mango chutney or chili-rubbed baby back ribs. Yet they’re mellow enough for penne pasta with roasted red peppers and mushrooms, or smoked chicken sausage. Forget the rules, just “monkey” around with flavors to discover your favorite food pairings.
